- Pork shoulder - 500 grams, cut into 2.5 cm cubes
- Olive oil - 3 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Tomato paste - 2 tablespoons
- Chopped tomatoes - 200 grams (canned or fresh)
- Red wine vinegar - 2 tablespoons
- Water - 200 ml
- Oregano - 1 teaspoon, dried
- Thyme - 1 teaspoon, dried
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bay leaf - 1
- Feta cheese - 50 grams, crumbled (for serving)
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the pork cubes to the pot and brown them on all sides for about 10 minutes.
- Mix in the tomato paste, chopped tomatoes, red wine vinegar, water, oregano, thyme, salt, black pepper, and bay leaf. Bring the mixture to a simmer.
- Cover the pot and reduce the heat to low. Let the stew cook for about 60 minutes, stirring occasionally, until the pork is tender.
- Once cooked, remove the bay leaf and adjust seasoning if necessary.
- Serve the stew hot, topped with crumbled feta cheese and garnished with fresh parsley.
