Ingredients

  • Pork shoulder - 500 grams, cut into 2.5 cm cubes
  • Olive oil - 3 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Tomato paste - 2 tablespoons
  • Chopped tomatoes - 200 grams (canned or fresh)
  • Red wine vinegar - 2 tablespoons
  • Water - 200 ml
  • Oregano - 1 teaspoon, dried
  • Thyme - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bay leaf - 1
  • Feta cheese - 50 grams, crumbled (for serving)
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the pork cubes to the pot and brown them on all sides for about 10 minutes.
  4. Mix in the tomato paste, chopped tomatoes, red wine vinegar, water, oregano, thyme, salt, black pepper, and bay leaf. Bring the mixture to a simmer.
  5. Cover the pot and reduce the heat to low. Let the stew cook for about 60 minutes, stirring occasionally, until the pork is tender.
  6. Once cooked, remove the bay leaf and adjust seasoning if necessary.
  7. Serve the stew hot, topped with crumbled feta cheese and garnished with fresh parsley.
