Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Garlic - 2 cloves, minced
  • Potatoes - 2 medium, peeled and cubed
  • Zucchini - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 large, chopped
  • Vegetable broth - 500 ml
  • Bay leaf - 1
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for about 5 minutes until softened.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the cubed potatoes, diced zucchini, bell pepper, and chopped tomato to the pot, stirring well to combine.
  4. Pour in the vegetable broth and add the bay leaf, dried oregano, salt, and black pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low and let the soup simmer for about 20 minutes, or until the vegetables are tender.
  6. Remove the bay leaf, stir in the fresh parsley and lemon juice, and adjust seasoning if necessary.
  7. Serve hot, garnished with additional parsley if desired.
