- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Garlic - 2 cloves, minced
- Potatoes - 2 medium, peeled and cubed
- Zucchini - 1 medium, diced
- Bell pepper - 1 medium, diced
- Tomato - 1 large, chopped
- Vegetable broth - 500 ml
- Bay leaf - 1
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for about 5 minutes until softened.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the cubed potatoes, diced zucchini, bell pepper, and chopped tomato to the pot, stirring well to combine.
- Pour in the vegetable broth and add the bay leaf, dried oregano, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low and let the soup simmer for about 20 minutes, or until the vegetables are tender.
- Remove the bay leaf, stir in the fresh parsley and lemon juice, and adjust seasoning if necessary.
- Serve hot, garnished with additional parsley if desired.
