- Long-grain rice - 150 grams
- Olive oil - 3 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Carrot - 1 medium, diced
- Tomato - 1 large, diced
- Vegetable broth - 400 milliliters
- Dried oregano - 1 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Rinse the long-grain rice under cold water until the water runs clear, then set it aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the diced red bell pepper, zucchini, and carrot, cooking for about 5-6 minutes until they start to soften.
- Add the diced tomato, dried oregano, salt, and black pepper. Cook for another 2-3 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil.
- Add the rinsed rice to the saucepan, stir well, and reduce the heat to low. Cover the saucepan with a lid and let it simmer for about 15-18 minutes, or until the rice is cooked and has absorbed the liquid.
- Once cooked, remove from heat and let it sit covered for an additional 5 minutes.
- Fluff the rice with a fork, then stir in the chopped parsley and lemon juice before serving.
