Ingredients

  • Long-grain rice - 150 grams
  • Olive oil - 3 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Carrot - 1 medium, diced
  • Tomato - 1 large, diced
  • Vegetable broth - 400 milliliters
  • Dried oregano - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear, then set it aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the diced red bell pepper, zucchini, and carrot, cooking for about 5-6 minutes until they start to soften.
  5. Add the diced tomato, dried oregano, salt, and black pepper. Cook for another 2-3 minutes, stirring occasionally.
  6. Pour in the vegetable broth and bring the mixture to a boil.
  7. Add the rinsed rice to the saucepan, stir well, and reduce the heat to low. Cover the saucepan with a lid and let it simmer for about 15-18 minutes, or until the rice is cooked and has absorbed the liquid.
  8. Once cooked, remove from heat and let it sit covered for an additional 5 minutes.
  9. Fluff the rice with a fork, then stir in the chopped parsley and lemon juice before serving.
