- Pork shoulder - 400 grams, cut into 2.5 cm cubes
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Red bell pepper - 1, diced
- Tomato paste - 2 tablespoons
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Bay leaf - 1
- Chicken broth - 500 ml, low sodium
- Salt - to taste
- Black pepper - to taste
- Olives - 50 grams, pitted and halved
- Feta cheese - 50 grams, crumbled (optional)
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced red bell pepper, cooking for another 2-3 minutes until fragrant.
- Increase the heat to medium-high and add the pork cubes to the pot. Brown the pork on all sides for about 8-10 minutes.
- Stir in the tomato paste, oregano, thyme, salt, and black pepper. Mix well to coat the pork.
- Pour in the chicken broth and add the bay leaf. Bring the mixture to a boil, then reduce the heat to low.
- Cover the pot and let it simmer for about 60 minutes, or until the pork is tender.
- Add the olives to the stew and cook for an additional 10 minutes.
- Serve hot, garnished with crumbled feta cheese if desired.
