Ingredients

  • Pork shoulder - 400 grams, cut into 2.5 cm cubes
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Red bell pepper - 1, diced
  • Tomato paste - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Bay leaf - 1
  • Chicken broth - 500 ml, low sodium
  • Salt - to taste
  • Black pepper - to taste
  • Olives - 50 grams, pitted and halved
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and diced red bell pepper, cooking for another 2-3 minutes until fragrant.
  3. Increase the heat to medium-high and add the pork cubes to the pot. Brown the pork on all sides for about 8-10 minutes.
  4. Stir in the tomato paste, oregano, thyme, salt, and black pepper. Mix well to coat the pork.
  5. Pour in the chicken broth and add the bay leaf. Bring the mixture to a boil, then reduce the heat to low.
  6. Cover the pot and let it simmer for about 60 minutes, or until the pork is tender.
  7. Add the olives to the stew and cook for an additional 10 minutes.
  8. Serve hot, garnished with crumbled feta cheese if desired.
