Ingredients

  • Pork shoulder - 250 grams
  • Pork fat - 100 grams
  • Garlic - 2 cloves, minced
  • Bay leaf - 1
  • Oregano - 1 teaspoon, dried
  • Black pepper - 1/2 teaspoon, freshly ground
  • Salt - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 100 milliliters

Steps

  1. Cut the pork shoulder and pork fat into small cubes.
  2. In a large pot, heat olive oil over medium heat and add the pork cubes. Sear until browned on all sides.
  3. Add minced garlic, bay leaf, oregano, black pepper, and salt to the pot, stirring to combine.
  4. Pour in the water and bring to a simmer. Cover the pot and reduce heat to low, cooking for about 1.5 hours until the pork is tender.
  5. Once cooked, remove the bay leaf and allow the mixture to cool slightly.
  6. Transfer the pork mixture to a food processor. Add lemon juice and blend until smooth, adjusting seasoning if necessary.
  7. Transfer the kavourmas to a serving dish, cover, and refrigerate for at least 2 hours before serving to enhance flavors.
