- Pork shoulder - 250 grams
- Pork fat - 100 grams
- Garlic - 2 cloves, minced
- Bay leaf - 1
- Oregano - 1 teaspoon, dried
- Black pepper - 1/2 teaspoon, freshly ground
- Salt - 1 teaspoon
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Water - 100 milliliters
Steps
- Cut the pork shoulder and pork fat into small cubes.
- In a large pot, heat olive oil over medium heat and add the pork cubes. Sear until browned on all sides.
- Add minced garlic, bay leaf, oregano, black pepper, and salt to the pot, stirring to combine.
- Pour in the water and bring to a simmer. Cover the pot and reduce heat to low, cooking for about 1.5 hours until the pork is tender.
- Once cooked, remove the bay leaf and allow the mixture to cool slightly.
- Transfer the pork mixture to a food processor. Add lemon juice and blend until smooth, adjusting seasoning if necessary.
- Transfer the kavourmas to a serving dish, cover, and refrigerate for at least 2 hours before serving to enhance flavors.
