- Pork fat - 100 grams

- Bay leaves - 2
- Black peppercorns - 5
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Lemon juice - 1 tablespoon
- Water - 200 milliliters
Steps
- Cut the pork shoulder into 2.5 cm cubes and set aside.
- In a large pot or Dutch oven, heat the olive oil over medium heat and add the pork fat, allowing it to melt and render.
- Once the fat is rendered, add the minced garlic and sauté until fragrant, about 1 minute.
- Add the pork shoulder cubes to the pot and brown them on all sides, about 5-7 minutes.
- Stir in the bay leaves, black peppercorns, oregano, salt, lemon juice, and water. Bring the mixture to a simmer.
- Cover the pot and reduce the heat to low, allowing the pork to cook slowly for about 1.5 hours or until tender.
- Once cooked, remove from heat and let it cool slightly before transferring to a serving dish or jar.
