  • Pork shoulder - 300 grams
  • Pork fat - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Bay leaves - 2
  • Black peppercorns - 5
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Water - 200 milliliters

Steps

  1. Cut the pork shoulder into 2.5 cm cubes and set aside.
  2. In a large pot or Dutch oven, heat the olive oil over medium heat and add the pork fat, allowing it to melt and render.
  3. Once the fat is rendered, add the minced garlic and sauté until fragrant, about 1 minute.
  4. Add the pork shoulder cubes to the pot and brown them on all sides, about 5-7 minutes.
  5. Stir in the bay leaves, black peppercorns, oregano, salt, lemon juice, and water. Bring the mixture to a simmer.
  6. Cover the pot and reduce the heat to low, allowing the pork to cook slowly for about 1.5 hours or until tender.
  7. Once cooked, remove from heat and let it cool slightly before transferring to a serving dish or jar.
