- Pork belly - 300 grams

- Thyme - 1 teaspoon, dried
- Water - 200 milliliters
Steps
- Cut the pork belly into small cubes, approximately 2 cm in size.
- In a heavy-bottomed pot, heat the olive oil over medium heat.
- Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the pork belly cubes to the pot and cook until browned on all sides, about 10-15 minutes.
- Stir in the bay leaves, black peppercorns, salt, paprika, and thyme.
- Pour in the water and bring to a simmer.
- Cover the pot with a lid and reduce the heat to low, allowing it to cook gently for about 1.5 hours, or until the pork is tender and the fat has rendered.
- Once cooked, remove from heat and let it cool slightly before transferring to a jar.
- Refrigerate for at least a few hours or overnight to allow the flavors to meld.
