Ingredients

  • Pork belly - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Bay leaves - 2
  • Black peppercorns - 1 teaspoon
  • Salt - 1 teaspoon
  • Paprika - 1 teaspoon
  • Thyme - 1 teaspoon, dried
  • Water - 200 milliliters

Steps

  1. Cut the pork belly into small cubes, approximately 2 cm in size.
  2. In a heavy-bottomed pot, heat the olive oil over medium heat.
  3. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Add the pork belly cubes to the pot and cook until browned on all sides, about 10-15 minutes.
  5. Stir in the bay leaves, black peppercorns, salt, paprika, and thyme.
  6. Pour in the water and bring to a simmer.
  7. Cover the pot with a lid and reduce the heat to low, allowing it to cook gently for about 1.5 hours, or until the pork is tender and the fat has rendered.
  8. Once cooked, remove from heat and let it cool slightly before transferring to a jar.
  9. Refrigerate for at least a few hours or overnight to allow the flavors to meld.
