Ingredients

  • Pasta (spaghetti or penne) - 200 grams
  • Halal pork shoulder, diced - 150 grams
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Tomato puree - 100 grams
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Fresh parsley, chopped - 2 tablespoons
  • Feta cheese, crumbled - 50 grams (optional)

Steps

  1. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced Halal pork and cook until browned on all sides, about 5-7 minutes.
  3. Add the chopped onion to the skillet and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.
  4. Stir in the tomato puree, oregano, thyme, salt, black pepper, and red pepper flakes (if using). Cook for 5-7 minutes, allowing the sauce to thicken slightly.
  5. Add the cooked pasta to the skillet, tossing to combine with the sauce and pork. If the mixture seems dry, add a bit of reserved pasta water until desired consistency is reached.
  6. Remove from heat and stir in the chopped parsley. If desired, sprinkle with crumbled feta cheese before serving.
