Ingredients
- Pasta (spaghetti or penne) - 200 grams
- Halal pork shoulder, diced - 150 grams
- Olive oil - 2 tablespoons
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Tomato puree - 100 grams
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/2 teaspoon (optional)
- Fresh parsley, chopped - 2 tablespoons
- Feta cheese, crumbled - 50 grams (optional)
Steps
- Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the diced Halal pork and cook until browned on all sides, about 5-7 minutes.
- Add the chopped onion to the skillet and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.
- Stir in the tomato puree, oregano, thyme, salt, black pepper, and red pepper flakes (if using). Cook for 5-7 minutes, allowing the sauce to thicken slightly.
- Add the cooked pasta to the skillet, tossing to combine with the sauce and pork. If the mixture seems dry, add a bit of reserved pasta water until desired consistency is reached.
- Remove from heat and stir in the chopped parsley. If desired, sprinkle with crumbled feta cheese before serving.
