- Pork shoulder - 300 grams
- Olive oil - 2 tablespoons
- Garlic cloves - 3, minced
- Dried oregano - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cauliflower - 300 grams, cut into florets
- Vegetable broth - 200 ml
- Fresh parsley - 1 tablespoon, chopped
Steps
- In a large pan, heat the olive oil over medium heat and add the minced garlic, cooking until fragrant.
- Add the pork shoulder to the pan and sear on all sides until browned, about 5-7 minutes.
- Sprinkle the dried oregano, paprika, salt, and black pepper over the pork, and stir to coat evenly.
- Add the vegetable broth to the pan, bring to a simmer, cover, and reduce the heat to low. Cook for 30 minutes.
- While the pork is cooking, preheat the oven to 200°C (400°F).
- In a baking dish, place the cauliflower florets, drizzle with olive oil, season with salt, and toss to coat.
- Roast the cauliflower in the oven for 20-25 minutes until golden and tender, stirring halfway through.
- Once the pork is done, shred it with two forks and mix it back into the cooking liquid.
- Serve the shredded pork alongside the roasted cauliflower, garnished with fresh parsley.
