Ingredients

  • Pork shoulder - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic cloves - 3, minced
  • Dried oregano - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cauliflower - 300 grams, cut into florets
  • Vegetable broth - 200 ml
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. In a large pan, heat the olive oil over medium heat and add the minced garlic, cooking until fragrant.
  2. Add the pork shoulder to the pan and sear on all sides until browned, about 5-7 minutes.
  3. Sprinkle the dried oregano, paprika, salt, and black pepper over the pork, and stir to coat evenly.
  4. Add the vegetable broth to the pan, bring to a simmer, cover, and reduce the heat to low. Cook for 30 minutes.
  5. While the pork is cooking, preheat the oven to 200°C (400°F).
  6. In a baking dish, place the cauliflower florets, drizzle with olive oil, season with salt, and toss to coat.
  7. Roast the cauliflower in the oven for 20-25 minutes until golden and tender, stirring halfway through.
  8. Once the pork is done, shred it with two forks and mix it back into the cooking liquid.
  9. Serve the shredded pork alongside the roasted cauliflower, garnished with fresh parsley.
