  • Pork shoulder - 300 grams
  • Pork fat or lard - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Oregano - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Cut the pork shoulder into bite-sized pieces and season with salt, black pepper, and dried oregano.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Increase the heat to medium-high and add the seasoned pork pieces to the skillet. Brown the meat on all sides, about 10 minutes.
  4. Reduce the heat to low and add the pork fat to the skillet, allowing it to melt and coat the pork. Stir occasionally for about 30 minutes until the pork is tender.
  5. Once the pork is tender, remove it from heat and stir in the crumbled feta cheese, chopped parsley, and lemon juice.
