- Pork shoulder - 300 grams, diced
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Chicken broth - 500 milliliters
- Water - 250 milliliters
- Eggs - 2 large
- Lemon juice - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a large pot, heat olive oil over medium heat. Add the diced pork shoulder and brown on all sides, about 5-7 minutes.
- Add the chopped onion, minced garlic, diced carrot, and diced celery to the pot. Sauté for another 5 minutes until the vegetables start to soften.
- Pour in the chicken broth and water. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 25-30 minutes until the pork is tender.
- In a bowl, whisk together the eggs and lemon juice until well combined. Set aside.
- Once the pork is tender, slowly ladle some of the hot broth into the egg mixture, whisking constantly to temper the eggs and prevent them from curdling.
- Gradually add the tempered egg mixture back into the pot, stirring gently to combine. Cook for another 5 minutes on low heat, allowing the soup to thicken slightly.
- Season with salt and black pepper to taste. Serve hot, garnished with fresh parsley.
