Ingredients

  • Pork shoulder - 300 grams, diced
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Chicken broth - 500 milliliters
  • Water - 250 milliliters
  • Eggs - 2 large
  • Lemon juice - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a large pot, heat olive oil over medium heat. Add the diced pork shoulder and brown on all sides, about 5-7 minutes.
  2. Add the chopped onion, minced garlic, diced carrot, and diced celery to the pot. Sauté for another 5 minutes until the vegetables start to soften.
  3. Pour in the chicken broth and water. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 25-30 minutes until the pork is tender.
  4. In a bowl, whisk together the eggs and lemon juice until well combined. Set aside.
  5. Once the pork is tender, slowly ladle some of the hot broth into the egg mixture, whisking constantly to temper the eggs and prevent them from curdling.
  6. Gradually add the tempered egg mixture back into the pot, stirring gently to combine. Cook for another 5 minutes on low heat, allowing the soup to thicken slightly.
  7. Season with salt and black pepper to taste. Serve hot, garnished with fresh parsley.
