- Cherry tomatoes - 150 grams, halved

- Dried oregano - 1 teaspoon

- Black pepper - 1/4 teaspoon
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped red onion and sauté for 3-4 minutes until translucent.
- Stir in the diced bell pepper and zucchini, and cook for an additional 5 minutes until softened.
- Add the cherry tomatoes and minced garlic, cooking for another 3-4 minutes until the tomatoes begin to soften.
- Sprinkle the dried oregano, salt, and black pepper over the vegetables, stirring to combine.
- Remove the skillet from heat and fold in the crumbled feta cheese and chopped parsley.
- Serve hot, optionally with crusty bread on the side.
