Ingredients

  • Bell pepper (any color) - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Cherry tomatoes - 150 grams, halved
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped red onion and sauté for 3-4 minutes until translucent.
  3. Stir in the diced bell pepper and zucchini, and cook for an additional 5 minutes until softened.
  4. Add the cherry tomatoes and minced garlic, cooking for another 3-4 minutes until the tomatoes begin to soften.
  5. Sprinkle the dried oregano, salt, and black pepper over the vegetables, stirring to combine.
  6. Remove the skillet from heat and fold in the crumbled feta cheese and chopped parsley.
  7. Serve hot, optionally with crusty bread on the side.
