  • walnuts - 100 grams
  • all-purpose flour - 100 grams
  • brown sugar - 80 grams
  • plant-based milk (almond or soy) - 100 ml
  • coconut oil - 50 grams, melted
  • baking powder - 1 teaspoon
  • ground cinnamon - 1 teaspoon
  • vanilla extract - 1 teaspoon
  • maple syrup - 2 tablespoons
  • water - 50 ml

Steps

  1. Preheat the oven to 180°C (350°F) and grease a small baking dish.
  2. In a food processor, blend the walnuts until finely chopped but not powdered.
  3. In a mixing bowl, combine the chopped walnuts, flour, brown sugar, baking powder, and cinnamon.
  4. In another bowl, mix the melted coconut oil, plant-based milk, vanilla extract, and maple syrup together until well combined.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  6. Add water gradually to achieve a thick batter consistency.
