- brown sugar - 80 grams
- plant-based milk (almond or soy) - 100 ml
- coconut oil - 50 grams, melted
- baking powder - 1 teaspoon
- ground cinnamon - 1 teaspoon
- vanilla extract - 1 teaspoon
- maple syrup - 2 tablespoons
- water - 50 ml
Steps
- Preheat the oven to 180°C (350°F) and grease a small baking dish.
- In a food processor, blend the walnuts until finely chopped but not powdered.
- In a mixing bowl, combine the chopped walnuts, flour, brown sugar, baking powder, and cinnamon.
- In another bowl, mix the melted coconut oil, plant-based milk, vanilla extract, and maple syrup together until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Add water gradually to achieve a thick batter consistency.
- Pour the batter into the prepared baking dish and smooth the top.
