- Walnuts - 100 grams
- Maple syrup - 60 ml
- Almond milk - 100 ml
- Cinnamon powder - 1 teaspoon
- Nutmeg - 1/4 teaspoon
- Vanilla extract - 1 teaspoon
- Chopped fresh mint - 1 tablespoon
- Coconut oil - 1 tablespoon
- Sea salt - a pinch
Steps
- Preheat your oven to 180°C (350°F).
- Spread the walnuts on a baking sheet and toast them in the oven for 10-12 minutes until they are fragrant and lightly golden.
- Remove the walnuts from the oven and let them cool slightly before chopping them coarsely.
- In a saucepan over medium heat, combine the almond milk, maple syrup, cinnamon, nutmeg, and vanilla extract. Stir gently until heated through.
- Add the chopped walnuts to the saucepan, along with the coconut oil and a pinch of sea salt. Stir well to combine.
- Cook the mixture for another 5-7 minutes, allowing it to thicken slightly while stirring occasionally.
- Remove the saucepan from the heat and let it cool for a few minutes.
- Serve the Karydaki warm or at room temperature, garnished with chopped fresh mint.
