Ingredients

  • Walnuts - 100 grams
  • Maple syrup - 60 ml
  • Almond milk - 100 ml
  • Cinnamon powder - 1 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Vanilla extract - 1 teaspoon
  • Chopped fresh mint - 1 tablespoon
  • Coconut oil - 1 tablespoon
  • Sea salt - a pinch

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Spread the walnuts on a baking sheet and toast them in the oven for 10-12 minutes until they are fragrant and lightly golden.
  3. Remove the walnuts from the oven and let them cool slightly before chopping them coarsely.
  4. In a saucepan over medium heat, combine the almond milk, maple syrup, cinnamon, nutmeg, and vanilla extract. Stir gently until heated through.
  5. Add the chopped walnuts to the saucepan, along with the coconut oil and a pinch of sea salt. Stir well to combine.
  6. Cook the mixture for another 5-7 minutes, allowing it to thicken slightly while stirring occasionally.
  7. Remove the saucepan from the heat and let it cool for a few minutes.
  8. Serve the Karydaki warm or at room temperature, garnished with chopped fresh mint.
