Ingredients

  • All-purpose flour - 120 grams
  • Unsalted butter - 100 grams
  • Water - 120 ml
  • Eggs - 2 large
  • Granulated sugar - 50 grams
  • Vanilla extract - 1 teaspoon
  • Milk - 250 ml
  • Cornstarch - 30 grams
  • Salt - 1/4 teaspoon
  • Powdered sugar - for dusting

Steps

  1. Preheat the oven to 200°C (392°F).
  2. In a saucepan, combine the water and butter over medium heat, stirring until the butter melts.
  3. Remove from heat and add the flour and salt, mixing until a dough forms.
  4. Return to low heat, stirring constantly until the dough pulls away from the sides of the pan, about 2-3 minutes.
  5. Remove from heat and let it cool slightly, then incorporate the eggs one at a time, mixing well after each addition until smooth.
  6. Divide the dough in half and spread each half onto a parchment-lined baking tray into a rectangle, roughly 1 cm thick.
  7. Bake for 25-30 minutes until golden brown and puffed. Let cool completely.
  8. In another saucepan, whisk together the milk, sugar, cornstarch, and vanilla extract over medium heat until it thickens, about 5-7 minutes.
  9. Remove the custard from heat and let it cool slightly before spreading it between the two layers of baked pastry.
  10. Top with the second layer of pastry and dust with powdered sugar before serving.
