- Kale - 200 grams, chopped
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Vegetable broth - 500 ml
- Tomatoes - 200 grams, diced (canned or fresh)
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 50 grams, crumbled (optional)
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrot, and celery, and sauté for about 5 minutes until softened.
- Stir in the chopped kale and cook for another 3 minutes until it begins to wilt.
- Add the diced tomatoes and vegetable broth to the pot, then season with salt and black pepper. Bring to a boil.
- Reduce the heat and let the soup simmer for about 15 minutes, allowing the flavors to meld.
