Ingredients

  • Kale - 200 grams, chopped
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Vegetable broth - 500 ml
  • Tomatoes - 200 grams, diced (canned or fresh)
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50 grams, crumbled (optional)
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrot, and celery, and sauté for about 5 minutes until softened.
  2. Stir in the chopped kale and cook for another 3 minutes until it begins to wilt.
  3. Add the diced tomatoes and vegetable broth to the pot, then season with salt and black pepper. Bring to a boil.
  4. Reduce the heat and let the soup simmer for about 15 minutes, allowing the flavors to meld.
  5. Stir in the lemon juice just before serving to brighten the flavor.
  6. Serve hot, garnished with crumbled feta cheese and fresh parsley if desired.
