  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Kalamata olives - 80g, pitted and sliced
  • Feta cheese - 50g, crumbled
  • Cherry tomatoes - 100g, halved
  • Fresh basil - a handful, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, grated Parmesan cheese, egg, olive oil, dried oregano, garlic powder, salt, and black pepper. Mix until a dough forms.
  3. Press the dough into a greased tart pan or onto a parchment-lined baking sheet to form a crust, ensuring the edges are slightly raised.
  4. Bake the crust in the preheated oven for 10-12 minutes, or until golden brown.
  5. Remove the crust from the oven and evenly distribute the sliced Kalamata olives and halved cherry tomatoes over the top.
  6. Sprinkle crumbled feta cheese and chopped fresh basil over the olives and tomatoes.

  8. Remove from the oven, let cool for a few minutes, slice, and serve warm.
