- Kalamata olives - 150g, pitted and roughly chopped
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Tomato - 1 medium, diced
- Vegetable broth - 500ml
- Fresh basil - 10g, chopped
- Dried oregano - 1 teaspoon
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the olive oil in a medium pot over medium heat.
- Add the diced onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced tomato and cook for an additional 2-3 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, reduce the heat to low and stir in the chopped Kalamata olives, dried oregano, salt, and black pepper.
- Simmer the soup for 10-15 minutes to allow the flavors to meld together.
- Remove from heat and stir in the freshly chopped basil and lemon juice.
