- Canned chickpeas - 240 grams (1 cup)
- Kalamata olives - 100 grams (about 3/4 cup, pitted and chopped)
- Breadcrumbs - 60 grams (1/2 cup)
- Feta cheese - 50 grams (1/4 cup, crumbled)
- Garlic - 2 cloves (minced)
- Red onion - 50 grams (1/4 cup, finely chopped)
- Fresh parsley - 15 grams (1/4 cup, chopped)
- Egg - 1 large
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole wheat burger buns - 2
- Lettuce leaves - 2 leaves
- Tomato - 1 medium (sliced)
- Cucumber - 1/2 medium (sliced)
- Tzatziki sauce - 60 grams (1/4 cup)
Steps
- Preheat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
- In a mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth but still slightly chunky.
- Add the chopped Kalamata olives, breadcrumbs, feta cheese, minced garlic, chopped red onion, parsley, egg, salt, and black pepper to the mashed chickpeas. Mix until well combined.
- Form the mixture into two equal-sized patties.
- In the preheated skillet, add the patties and cook for about 5-6 minutes on each side or until golden brown and heated through.
- While the patties are cooking, toast the whole wheat burger buns lightly in a separate skillet or toaster.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a patty, slices of tomato, cucumber, and a generous spoonful of tzatziki sauce.
- Top with the other half of the bun and serve immediately.
