- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 7 grams (1 packet)
- Kalamata olives - 100 grams, pitted and chopped
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Dried oregano - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.
- In a large mixing bowl, whisk together the flour, salt, dried oregano, and black pepper.
- Make a well in the center of the dry ingredients and add the yeast mixture and olive oil. Mix until a dough forms.
- Add the chopped Kalamata olives and mix until evenly distributed.
- Knead the dough on a floured surface for about 10 minutes, until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, punch it down and shape it into a round loaf. Place it on a baking sheet lined with parchment paper.
- Cover the shaped loaf with a towel and let it rise for another 20-30 minutes.
- After the second rise, score the top of the loaf with a sharp knife and bake in the preheated oven for 25-30 minutes or until golden brown and sounds hollow when tapped.
- Allow the bread to cool on a wire rack before slicing. Serve warm or at room temperature.
