  • Kalamata beans - 200 grams (cooked)

  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Vegetable broth - 500 ml
  • Canned diced tomatoes - 200 grams
  • Bay leaf - 1
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium pot, heat the olive oil over medium heat.
  2. Add the chopped onion, carrot, and celery, and sauté for about 5 minutes until softened.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the cooked Kalamata beans, diced tomatoes, vegetable broth, bay leaf, and oregano to the pot.
  5. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes.
  6. Season with salt and black pepper to taste.
  7. Remove the bay leaf before serving.
