- Calamari - 200 grams, cleaned and sliced into rings
- Eggs - 4 large
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/2 teaspoon
Steps
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Add the minced garlic and sauté for 1 minute until fragrant.
- Add the calamari rings to the skillet and cook for about 2-3 minutes until they turn opaque and slightly golden, stirring occasionally.
- While the calamari is cooking, crack the eggs into a bowl, add salt, black pepper, and paprika, and whisk until well combined.
- Once the calamari is cooked, push it to one side of the skillet and add the remaining tablespoon of olive oil.
- Pour the egg mixture into the empty side of the skillet and scramble gently until just set, about 2-3 minutes.
