Ingredients

  • Calamari - 200 grams, cleaned and sliced into rings
  • Eggs - 4 large
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon

Steps

  1. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  2. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the calamari rings to the skillet and cook for about 2-3 minutes until they turn opaque and slightly golden, stirring occasionally.
  4. While the calamari is cooking, crack the eggs into a bowl, add salt, black pepper, and paprika, and whisk until well combined.
  5. Once the calamari is cooked, push it to one side of the skillet and add the remaining tablespoon of olive oil.
  6. Pour the egg mixture into the empty side of the skillet and scramble gently until just set, about 2-3 minutes.
  7. Mix the calamari with the scrambled eggs and sprinkle with chopped parsley and lemon juice before serving.
