Ingredients

  • King oyster mushrooms - 200 grams
  • All-purpose flour - 50 grams
  • Cornstarch - 30 grams
  • Plant-based milk - 100 milliliters
  • Breadcrumbs - 100 grams
  • Olive oil - 50 milliliters (for frying)
  • Lemon juice - 1 tablespoon
  • Fresh dill - 1 tablespoon, chopped
  • Garlic powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Clean the king oyster mushrooms and cut them into rings, resembling calamari.
  2. In a bowl, mix the all-purpose flour, cornstarch, garlic powder, salt, and black pepper.
  3. In another bowl, pour the plant-based milk.
  4. In a third bowl, place the breadcrumbs.
  5. Dip each mushroom ring first into the flour mixture, then into the plant-based milk, and finally coat it with breadcrumbs.
  6. Heat olive oil in a frying pan over medium heat.
  7. Fry the coated mushroom rings for 3-4 minutes on each side or until golden brown and crispy.
  8. For the dipping sauce, mix lemon juice, chopped dill, and a pinch of salt in a small bowl.
  9. Serve the fried mushroom rings hot with the lemon-dill dipping sauce.
