Ingredients

  • Olive oil - 2 tablespoons
  • Onion, chopped - 1 medium (about 150g)
  • Garlic, minced - 3 cloves
  • Carrot, diced - 1 medium (about 100g)
  • Celery, diced - 1 stalk (about 100g)
  • Red bell pepper, diced - 1 medium (about 150g)
  • Zucchini, diced - 1 medium (about 150g)
  • Vegetable broth - 500 ml
  • Diced tomatoes, canned - 200 g
  • Bay leaf - 1
  • Dried oregano - 1 teaspoon
  • Fresh parsley, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the diced carrot, celery, and red bell pepper to the pot, and sauté for 5-7 minutes until the vegetables start to soften.
  5. Add the diced zucchini and continue to cook for another 3 minutes.
  6. Pour in the vegetable broth and add the canned diced tomatoes, bay leaf, and dried oregano.
  7. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
  8. Season the soup with salt and black pepper to taste.
  9. Remove the bay leaf and stir in the chopped parsley and lemon juice just before serving.
