- Onion, chopped - 1 medium (about 150g)
- Garlic, minced - 3 cloves
- Carrot, diced - 1 medium (about 100g)
- Celery, diced - 1 stalk (about 100g)
- Red bell pepper, diced - 1 medium (about 150g)
- Zucchini, diced - 1 medium (about 150g)
- Vegetable broth - 500 ml
- Diced tomatoes, canned - 200 g
- Bay leaf - 1
- Dried oregano - 1 teaspoon
- Fresh parsley, chopped - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced carrot, celery, and red bell pepper to the pot, and sauté for 5-7 minutes until the vegetables start to soften.
- Add the diced zucchini and continue to cook for another 3 minutes.
- Pour in the vegetable broth and add the canned diced tomatoes, bay leaf, and dried oregano.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
- Season the soup with salt and black pepper to taste.
- Remove the bay leaf and stir in the chopped parsley and lemon juice just before serving.
