- Zucchini - 2 medium
- Cherry tomatoes - 200 grams
- Cucumber - 1 medium
- Feta cheese - 100 grams
- Red onion - 1 small
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat a grill or grill pan over medium-high heat.
- Slice the zucchini into 1 cm thick rounds and toss them with 1 tablespoon of olive oil, salt, and black pepper.
- Grill the zucchini slices for about 3-4 minutes on each side, or until they are tender and have grill marks. Remove from the grill and let cool slightly.
- While the zucchini is grilling, chop the cherry tomatoes, cucumber, and red onion into bite-sized pieces.
