Ingredients

  • Zucchini - 2 medium
  • Cherry tomatoes - 200 grams
  • Cucumber - 1 medium
  • Feta cheese - 100 grams
  • Red onion - 1 small
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat a grill or grill pan over medium-high heat.
  2. Slice the zucchini into 1 cm thick rounds and toss them with 1 tablespoon of olive oil, salt, and black pepper.
  3. Grill the zucchini slices for about 3-4 minutes on each side, or until they are tender and have grill marks. Remove from the grill and let cool slightly.
  4. While the zucchini is grilling, chop the cherry tomatoes, cucumber, and red onion into bite-sized pieces.
  5. In a large bowl, combine the chopped tomatoes, cucumber, red onion, and grilled zucchini.
  6. Crumble the feta cheese over the salad and add the chopped parsley.
  7. In a small bowl, whisk together the remaining 2 tablespoons of olive oil and lemon juice, then drizzle over the salad.
  8. Toss everything gently to combine, season with additional salt and pepper to taste, and serve immediately.
