  • Kalamata olives - 50 grams
  • Feta cheese - 50 grams
  • Fresh parsley - 20 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat a grill pan over medium heat.
  2. Slice the zucchini into thin rounds to mimic calamari rings.
  3. Drizzle the zucchini slices with 1 tablespoon of olive oil, salt, and black pepper.
  4. Grill the zucchini for about 3-4 minutes on each side until grill marks appear and they are tender.
