Ingredients

  • Basmati rice - 150 grams
  • Olive oil - 2 tablespoons
  • Red onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1, diced
  • Zucchini - 1 medium, diced
  • Cherry tomatoes - 200 grams, halved
  • Spinach - 100 grams, fresh
  • Vegetable broth - 400 ml
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain it.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped red onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic, diced bell pepper, and zucchini. Cook for another 5 minutes, stirring occasionally.
  4. Add the halved cherry tomatoes and cook for an additional 3 minutes until they begin to soften.
  5. Pour in the vegetable broth, add the drained basmati rice, oregano, salt, and black pepper. Stir well to combine.
  6. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 15 minutes until the rice is cooked and the liquid is absorbed.
  7. Remove from heat, fold in the fresh spinach and lemon juice, and let it sit covered for another 5 minutes.
  8. Fluff the rice with a fork, garnish with chopped parsley, and serve warm.
