- Basmati rice - 150 grams
- Olive oil - 2 tablespoons
- Red onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1, diced
- Zucchini - 1 medium, diced
- Cherry tomatoes - 200 grams, halved
- Spinach - 100 grams, fresh
- Vegetable broth - 400 ml
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain it.
- In a medium pot, heat the olive oil over medium heat. Add the chopped red onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic, diced bell pepper, and zucchini. Cook for another 5 minutes, stirring occasionally.
- Add the halved cherry tomatoes and cook for an additional 3 minutes until they begin to soften.
- Pour in the vegetable broth, add the drained basmati rice, oregano, salt, and black pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 15 minutes until the rice is cooked and the liquid is absorbed.
- Remove from heat, fold in the fresh spinach and lemon juice, and let it sit covered for another 5 minutes.
- Fluff the rice with a fork, garnish with chopped parsley, and serve warm.
