- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Rice flour - 1/2 cup (for dusting)

Steps
- In a small saucepan, heat 2 tablespoons of olive oil over medium heat. Add the pork belly and cook until crispy and golden, about 10-15 minutes. Stir occasionally to ensure even cooking.
- Add minced garlic, paprika, oregano, salt, and black pepper to the pork belly. Cook for another 5 minutes until the garlic is fragrant and the spices are well combined. Remove from heat and set aside.
- While the pork is cooking, prepare the calamari. Rinse the calamari rings under cold water and pat dry with paper towels.
- Dust the calamari rings with rice flour, shaking off any excess.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the calamari rings in a single layer, cooking for about 2-3 minutes on each side until they are golden and crispy. Avoid overcrowding the pan; you may need to do this in batches.
- Once cooked, remove the calamari from the skillet and drain on paper towels. Season with a pinch of salt.
- To serve, plate the crispy calamari and top with the pork belly confit. Garnish with fresh parsley and serve with lemon wedges on the side.
