Ingredients

  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Rice flour - 1/2 cup (for dusting)
  • Lemon wedges - for serving

Steps

  1. In a small saucepan, heat 2 tablespoons of olive oil over medium heat. Add the pork belly and cook until crispy and golden, about 10-15 minutes. Stir occasionally to ensure even cooking.
  2. Add minced garlic, paprika, oregano, salt, and black pepper to the pork belly. Cook for another 5 minutes until the garlic is fragrant and the spices are well combined. Remove from heat and set aside.
  3. While the pork is cooking, prepare the calamari. Rinse the calamari rings under cold water and pat dry with paper towels.
  4. Dust the calamari rings with rice flour, shaking off any excess.
  5. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the calamari rings in a single layer, cooking for about 2-3 minutes on each side until they are golden and crispy. Avoid overcrowding the pan; you may need to do this in batches.
  6. Once cooked, remove the calamari from the skillet and drain on paper towels. Season with a pinch of salt.
  7. To serve, plate the crispy calamari and top with the pork belly confit. Garnish with fresh parsley and serve with lemon wedges on the side.
