Ingredients

  • Zucchini - 2 medium
  • All-purpose flour - 100 grams
  • Egg - 1 large
  • Breadcrumbs - 100 grams
  • Feta cheese - 100 grams, crumbled
  • Olive oil - 50 milliliters
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, for serving

Steps

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Wash the zucchini, cut off the ends, and slice them into rings about 1 cm thick.
  3. In a shallow bowl, combine the all-purpose flour, salt, and black pepper.
  4. In another bowl, beat the egg until well mixed.
  5. In a third bowl, place the breadcrumbs and dried oregano.
  6. Dip each zucchini ring into the flour mixture, then the egg, and finally coat with the breadcrumbs, pressing gently to adhere.
  7. Place the breaded zucchini rings on the prepared baking sheet. Drizzle with olive oil.
  8. Bake in the preheated oven for about 20 minutes, or until golden brown and crispy, flipping halfway through.
  9. Once baked, remove from the oven and immediately sprinkle the crumbled feta cheese and chopped parsley over the zucchini.
  10. Serve hot with lemon wedges on the side.
