- All-purpose flour - 100 grams
- Egg - 1 large
- Breadcrumbs - 100 grams
- Feta cheese - 100 grams, crumbled
- Olive oil - 50 milliliters
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, for serving
Steps
- Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Wash the zucchini, cut off the ends, and slice them into rings about 1 cm thick.
- In a shallow bowl, combine the all-purpose flour, salt, and black pepper.
- In another bowl, beat the egg until well mixed.
- In a third bowl, place the breadcrumbs and dried oregano.
- Dip each zucchini ring into the flour mixture, then the egg, and finally coat with the breadcrumbs, pressing gently to adhere.
- Place the breaded zucchini rings on the prepared baking sheet. Drizzle with olive oil.
- Bake in the preheated oven for about 20 minutes, or until golden brown and crispy, flipping halfway through.
- Once baked, remove from the oven and immediately sprinkle the crumbled feta cheese and chopped parsley over the zucchini.
- Serve hot with lemon wedges on the side.
