- Squid (cleaned) - 400 grams
- Short-grain rice - 100 grams
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Tomato (diced) - 1 medium
- Fresh parsley (chopped) - 2 tablespoons
- Fresh dill (chopped) - 1 tablespoon
- Olive oil - 3 tablespoons
- Vegetable broth - 250 ml
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a pan, heat 2 tablespoons of olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
- Add the diced tomato and cook for 5 minutes until softened.
- Stir in the rice, vegetable broth, parsley, dill, salt, pepper, and paprika. Bring to a boil, then reduce heat to low and simmer for 15 minutes, or until the rice is almost cooked.
- Remove the rice mixture from the heat and let it cool slightly.
- Stuff each cleaned squid with the rice mixture, filling them about three-quarters full to allow for expansion during cooking.
- Place the stuffed squid in a baking dish. Drizzle with the remaining olive oil and lemon juice.
- Cover the dish with foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes to brown the tops.
- Serve warm, garnished with fresh herbs if desired.
