- Water - 100 ml
- Fresh parsley (chopped) - 2 tablespoons
- Lemon zest - 1 teaspoon
- Olive oil (for frying) - 300 ml
Steps
- In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper.
- In a separate bowl, whisk the egg and gradually add the water, then mix in the lemon zest and chopped parsley.
- Pour the wet ingredients into the dry ingredients and stir until just combined; the batter should be thick but pourable.
- Add the sliced calamari to the batter and ensure they are well coated.
- In a deep frying pan, heat the olive oil over medium-high heat until it reaches 180°C (350°F).
- Using a spoon, drop spoonfuls of the calamari batter into the hot oil, being careful not to overcrowd the pan.
- Fry the fritters for about 3-4 minutes or until they are golden brown and crispy, turning them halfway through cooking.
- Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
- Serve warm, garnished with additional chopped parsley and lemon wedges.
