Ingredients

  • Calamari (cleaned and sliced) - 200 grams
  • All-purpose flour - 100 grams
  • Cornstarch - 30 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1 large
  • Water - 100 ml
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Olive oil (for frying) - 300 ml

Steps

  1. In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper.
  2. In a separate bowl, whisk the egg and gradually add the water, then mix in the lemon zest and chopped parsley.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined; the batter should be thick but pourable.
  4. Add the sliced calamari to the batter and ensure they are well coated.
  5. In a deep frying pan, heat the olive oil over medium-high heat until it reaches 180°C (350°F).
  6. Using a spoon, drop spoonfuls of the calamari batter into the hot oil, being careful not to overcrowd the pan.
  7. Fry the fritters for about 3-4 minutes or until they are golden brown and crispy, turning them halfway through cooking.
  8. Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
  9. Serve warm, garnished with additional chopped parsley and lemon wedges.
