Ingredients

  • Calamari - 200 grams, cleaned and sliced
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Canned tomatoes - 400 grams, crushed
  • Cannellini beans - 200 grams, drained and rinsed
  • Vegetable broth - 500 milliliters
  • Bay leaf - 1
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion, carrot, and celery to the pot, and sauté until the vegetables are softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the crushed canned tomatoes, cannellini beans, vegetable broth, bay leaf, and dried oregano to the pot. Season with salt and black pepper to taste.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
  6. Add the sliced calamari to the pot and cook for another 5 minutes until the calamari is tender.
  7. Remove the bay leaf and serve the soup hot, garnished with fresh parsley.
