  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Diced tomatoes - 400 grams (canned or fresh)
  • Vegetable broth - 750 ml
  • Bay leaves - 2
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté until the vegetables are softened, about 5-7 minutes.
  2. Add the rinsed lentils to the pot and stir to combine with the sautéed vegetables.
  3. Pour in the vegetable broth and add the diced tomatoes, bay leaves, dried oregano, salt, and black pepper. Bring to a boil, then reduce heat and let simmer for about 25 minutes, or until the lentils are tender.
  4. Add the calamari rings to the pot and cook for an additional 5-7 minutes until the calamari is cooked through and tender.
  5. Remove the bay leaves and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
