- Vegetable broth - 750 ml
- Bay leaves - 2
- Dried oregano - 1 teaspoon

- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté until the vegetables are softened, about 5-7 minutes.
- Add the rinsed lentils to the pot and stir to combine with the sautéed vegetables.
- Pour in the vegetable broth and add the diced tomatoes, bay leaves, dried oregano, salt, and black pepper. Bring to a boil, then reduce heat and let simmer for about 25 minutes, or until the lentils are tender.
- Add the calamari rings to the pot and cook for an additional 5-7 minutes until the calamari is cooked through and tender.
