Ingredients

  • Fresh calamari - 300 grams, cleaned and sliced
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Vegetable broth - 500 milliliters
  • Water - 200 milliliters
  • Lemon juice - 2 tablespoons
  • Eggs - 2 large
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté for about 5 minutes until the vegetables are softened.
  2. Add the sliced calamari to the pot and cook for an additional 3-4 minutes until they turn opaque.
  3. Pour in the vegetable broth and water, then bring the mixture to a gentle simmer. Season with salt and black pepper to taste.
  4. Simmer for about 10 minutes, allowing the flavors to meld and the calamari to become tender.
  5. In a separate bowl, whisk together the eggs and lemon juice until well combined.
  6. Once the soup is ready, remove it from heat. Gradually ladle a small amount of the hot broth into the egg-lemon mixture while whisking continuously to temper the eggs.
  7. Slowly pour the tempered egg-lemon mixture back into the soup, stirring gently to combine. Be careful not to boil the soup after adding the egg mixture to prevent curdling.
  8. Garnish with fresh parsley and serve immediately.
