Ingredients

  • Chickpeas - 200 grams, drained and rinsed
  • Fresh parsley - 30 grams, chopped
  • Fresh dill - 15 grams, chopped
  • Garlic - 1 clove, minced
  • Red onion - 50 grams, finely chopped
  • Oats - 50 grams, ground into a flour
  • Feta cheese - 50 grams, crumbled
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Whole wheat burger buns - 2
  • Cucumber - 50 grams, grated
  • Greek yogurt - 100 grams
  • Lemon juice - 1 tablespoon
  • Dried mint - 1 teaspoon

Steps

  1. In a large mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth.
  2. Add the chopped parsley, dill, minced garlic, red onion, ground oats, crumbled feta cheese, egg, olive oil, salt, and black pepper to the bowl. Mix until well combined.
  3. Form the mixture into two patties and refrigerate for 15 minutes to firm up.
  4. While the patties are chilling, prepare the tzatziki sauce. In a small bowl, mix together the grated cucumber, Greek yogurt, lemon juice, dried mint, and a pinch of salt. Set aside.
  5. Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  6. Toast the whole wheat burger buns lightly in the skillet for 1-2 minutes.
  7. Assemble the burgers by placing each patty on a bun and topping with the tzatziki sauce. Serve immediately.
