Ingredients

  • Quinoa - 100 grams
  • Water - 250 ml
  • Cucumber - 1 small, diced
  • Tomato - 1 medium, diced
  • Red onion - 1/4 medium, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a saucepan, combine the rinsed quinoa and water. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and water is absorbed.
  4. Remove the pan from heat and let it sit, covered, for 5 minutes. Fluff the quinoa with a fork.
  5. In a large mixing bowl, combine the diced cucumber, diced tomato, finely chopped red onion, chopped parsley, chopped mint, and crumbled feta cheese.
  6. Add the cooked quinoa to the bowl with the vegetables and herbs.
  7. Drizzle the lemon juice and olive oil over the mixture. Season with salt and black pepper to taste.
  8. Toss everything gently until well combined. Serve immediately or chill in the fridge for 15 minutes before serving.
