- Quinoa - 100 grams
- Water - 250 ml
- Cucumber - 1 small, diced
- Tomato - 1 medium, diced
- Red onion - 1/4 medium, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the quinoa under cold water to remove any bitterness.
- In a saucepan, combine the rinsed quinoa and water. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and water is absorbed.
- Remove the pan from heat and let it sit, covered, for 5 minutes. Fluff the quinoa with a fork.
- In a large mixing bowl, combine the diced cucumber, diced tomato, finely chopped red onion, chopped parsley, chopped mint, and crumbled feta cheese.
- Add the cooked quinoa to the bowl with the vegetables and herbs.
- Drizzle the lemon juice and olive oil over the mixture. Season with salt and black pepper to taste.
- Toss everything gently until well combined. Serve immediately or chill in the fridge for 15 minutes before serving.
