Ingredients
- Quinoa - 100 grams
- Water - 250 ml
- Olive oil - 1 tablespoon
- Red onion - 50 grams, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 30 grams, chopped
- Fresh dill - 15 grams, chopped
- Feta cheese - 50 grams, crumbled
- Egg - 1 large
- Bread crumbs - 50 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Oregano - 1 teaspoon
- Lemon juice - 1 tablespoon
- Plain Greek yogurt - 100 grams (for sauce)
- Cucumber - 50 grams, grated (for sauce)
- Salt - a pinch (for sauce)
Steps
- Rinse the quinoa under cold water, then combine it with 250 ml of water in a saucepan. Bring it to a boil over medium heat, then reduce heat to low, cover, and simmer for 15 minutes until the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped red onion and minced garlic, sautéing until the onion is translucent (about 5 minutes).
- In a large bowl, combine the cooked quinoa, sautéed onion and garlic, chopped parsley, dill, crumbled feta cheese, egg, bread crumbs, salt, black pepper, oregano, and lemon juice. Mix thoroughly until well combined.
- Form the mixture into 2 patties. If the mixture is too crumbly, add a little more water or an extra egg to bind it together.
- Preheat a grill or non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until they are golden brown and heated through.
- While the burgers are cooking, prepare the yogurt sauce by mixing 100 grams of Greek yogurt with the grated cucumber and a pinch of salt in a small bowl.
- Serve the quinoa burgers warm, topped with the cucumber yogurt sauce.
