Ingredients

  • Quail - 2 whole (about 250g each)
  • Olive oil - 4 tablespoons
  • Garlic - 3 cloves, minced
  • Fresh oregano - 2 tablespoons, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon

Steps

  1. In a mixing bowl, combine olive oil, minced garlic, chopped oregano, chopped thyme, lemon juice, salt, black pepper, and paprika to create a marinade.
  2. Place the whole quails in a large resealable bag or a shallow dish and pour the marinade over them, ensuring they are well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 2 hours for better flavor.
  3. Preheat your grill to medium-high heat.
  4. Remove the quails from the marinade and allow any excess to drip off. Discard the marinade.
  5. Place the quails on the grill, breast side down. Grill for about 10-12 minutes on each side, or until the internal temperature reaches 74°C (165°F) and the skin is crispy.
  6. Once cooked, remove the quails from the grill and let them rest for 5 minutes before serving.
