- Quail - 2 whole (about 250g each)
- Olive oil - 4 tablespoons
- Garlic - 3 cloves, minced
- Fresh oregano - 2 tablespoons, chopped
- Fresh thyme - 1 tablespoon, chopped
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
Steps
- In a mixing bowl, combine olive oil, minced garlic, chopped oregano, chopped thyme, lemon juice, salt, black pepper, and paprika to create a marinade.
- Place the whole quails in a large resealable bag or a shallow dish and pour the marinade over them, ensuring they are well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 2 hours for better flavor.
- Preheat your grill to medium-high heat.
- Remove the quails from the marinade and allow any excess to drip off. Discard the marinade.
- Place the quails on the grill, breast side down. Grill for about 10-12 minutes on each side, or until the internal temperature reaches 74°C (165°F) and the skin is crispy.
- Once cooked, remove the quails from the grill and let them rest for 5 minutes before serving.
