Ingredients

  • Yukon Gold potatoes - 400 grams
  • Olive oil - 2 tablespoons
  • Fresh rosemary - 1 tablespoon, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon

Steps

  1. Preheat your BBQ grill to medium heat.
  2. Wash and scrub the Yukon Gold potatoes, then cut them into wedges or quarters.
  3. In a large bowl, combine olive oil, chopped rosemary, chopped thyme, minced garlic, lemon juice, salt, black pepper, and paprika.
  4. Add the potato wedges to the bowl and toss until they are well coated with the herb mixture.
  5. Let the potatoes marinate for about 10 minutes for the flavors to meld.
  6. Place the marinated potatoes in a grill basket or wrap them in aluminum foil to prevent them from falling through the grill grates.
  7. Grill the potatoes for about 25-30 minutes, turning occasionally, until they are golden brown and tender when pierced with a fork.
  8. Remove from the grill and serve hot, garnished with additional fresh herbs if desired.
