Ingredients

  • Potatoes - 300 grams, peeled and diced
  • Canned chickpeas - 100 grams, drained and rinsed
  • Fresh parsley - 30 grams, finely chopped
  • Fresh dill - 15 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Whole wheat pita bread - 2 pieces
  • Tomato - 1 medium, sliced
  • Cucumber - 1 small, sliced
  • Red onion - 1/4, thinly sliced
  • Tahini - 2 tablespoons
  • Water - 1 tablespoon

Steps

  1. Boil the diced potatoes in salted water for about 15 minutes or until tender. Drain and let cool slightly.
  2. In a large bowl, mash the boiled potatoes and chickpeas together until mostly smooth with some chunks remaining.
  3. Add the chopped parsley, dill, minced garlic, olive oil, lemon juice, salt, black pepper, and ground cumin to the mashed mixture. Mix well until combined.
  4. Shape the mixture into two patties, about 1.5 cm thick.
  5. Heat a non-stick skillet over medium heat and add a little olive oil. Cook each patty for about 4-5 minutes on each side or until golden brown.
  6. Meanwhile, mix the tahini with water in a small bowl to create a drizzleable sauce.
  7. To assemble, place each patty inside a pita bread and top with sliced tomato, cucumber, and red onion. Drizzle with tahini sauce before serving.
