Ingredients

  • Cucumber - 1 medium, diced
  • Tomato - 1 large, diced
  • Red onion - 1/4 medium, thinly sliced
  • Bell pepper (any color) - 1/2, diced
  • Kalamata olives - 50 grams, pitted and halved
  • Fresh parsley - 15 grams, chopped
  • Fresh mint - 10 grams, chopped
  • Fresh dill - 10 grams, chopped
  • Olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Prepare all the vegetables by washing and chopping them: dice the cucumber and tomato, thinly slice the red onion, and dice the bell pepper.
  2. In a large bowl, combine the diced cucumber, tomato, red onion, bell pepper, and Kalamata olives.
  3. Chop the fresh parsley, mint, and dill, and add them to the bowl with the vegetables.
