  • 1/2 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup feta cheese - crumbled
  • 1/4 cup cherry tomatoes - halved
  • 1/4 cup bell pepper - diced
  • 1 tablespoon fresh basil - chopped
  • 1 tablespoon balsamic glaze (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Lay the sliced eggplant on a baking sheet and brush both sides with olive oil. Sprinkle with salt, black pepper, oregano, and garlic powder.
  3. Bake the eggplant in the preheated oven for 15 minutes until slightly tender.
