- Cucumber - 50 grams, grated
- Garlic - 1 clove, minced
- Lemon juice - 1 tablespoon
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cherry tomatoes - 100 grams, halved
- Red onion - 50 grams, thinly sliced
- Feta cheese - 30 grams, crumbled
- Fresh parsley - 1 tablespoon, chopped
Steps
- In a bowl, combine olive oil, garlic, lemon juice, oregano, salt, and black pepper to create a marinade.
- Cut the chicken breast into strips and add to the marinade, ensuring all pieces are well coated. Let it marinate for at least 15 minutes.
- While the chicken is marinating, prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, minced garlic, and a pinch of salt in a bowl. Set aside in the refrigerator.
- Heat a grill or grill pan over medium-high heat. Once hot, add the marinated chicken strips and cook for about 5-7 minutes on each side until fully cooked and golden brown.
- While the chicken is cooking, prepare the salad by combining cherry tomatoes, red onion, and parsley in a bowl. Drizzle with a little olive oil and toss gently.
- Once the chicken is cooked, remove it from the grill and let it rest for a few minutes.
- To serve, plate the grilled chicken alongside the salad and tzatziki sauce. Sprinkle crumbled feta cheese on top.
