Ingredients
- Chicken breast - 250 grams
- Olive oil - 2 tablespoons
- Greek yogurt - 100 grams
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole wheat pita bread - 2 pieces
- Tomato - 1 medium, sliced
- Cucumber - 1/2, sliced
- Red onion - 1/4, thinly sliced
- Fresh parsley - a handful, chopped
Steps
- In a bowl, combine olive oil, Greek yogurt, minced garlic, lemon juice, dried oregano, salt, and black pepper to create a marinade.
- Cut the chicken breast into thin strips and add them to the marinade. Mix well and let it marinate in the refrigerator for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat. Once hot, add the marinated chicken strips and grill for about 5-7 minutes, turning occasionally until fully cooked.
- While the chicken is grilling, prepare the toppings by slicing the tomato, cucumber, and red onion, and chopping the parsley.
- Once the chicken is cooked, remove it from the grill and let it rest for a couple of minutes.
- Warm the whole wheat pita bread on the grill for about 1 minute on each side.
- To assemble the gyro, place grilled chicken on the warm pita, add sliced vegetables, and top with fresh parsley. You can also add extra Greek yogurt as a sauce if desired.
