Ingredients

  • Zucchini - 2 medium (approximately 300g)
  • Olive oil - 2 tablespoons (30ml)
  • Lemon juice - 1 tablespoon (15ml)
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the grill to medium-high heat.
  2. Wash the zucchini and cut it into 1/4-inch thick slices.
  3. In a mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
  4. Add the zucchini slices to the bowl and toss them in the marinade until evenly coated.
  5. Let the zucchini marinate for about 10 minutes to absorb the flavors.
  6. Place the marinated zucchini slices on the grill and cook for 3-4 minutes on each side, or until grill marks appear and they are tender.
  7. Remove from the grill and transfer to a serving platter.
