- Lemon juice - 1 tablespoon (15ml)
- Garlic - 2 cloves, minced
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the grill to medium-high heat.
- Wash the zucchini and cut it into 1/4-inch thick slices.
- In a mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
- Add the zucchini slices to the bowl and toss them in the marinade until evenly coated.
- Let the zucchini marinate for about 10 minutes to absorb the flavors.
- Place the marinated zucchini slices on the grill and cook for 3-4 minutes on each side, or until grill marks appear and they are tender.
