Ingredients

  • Zucchini - 1 medium, sliced
  • Bell Pepper (any color) - 1 medium, cut into strips
  • Red Onion - 1 small, sliced into rings
  • Cherry Tomatoes - 200 grams, halved
  • Olive Oil - 2 tablespoons
  • Dried Oregano - 1 teaspoon
  • Salt - ½ teaspoon
  • Black Pepper - ¼ teaspoon
  • Fresh Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a large bowl, combine the sliced zucchini, bell pepper strips, red onion rings, and halved cherry tomatoes.
  3. Drizzle the olive oil over the vegetables, then sprinkle with dried oregano, salt, and black pepper. Toss well to coat all the vegetables evenly.
  4. Place the vegetables on the preheated grill in a single layer. Grill for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
