- Zucchini - 1 medium, sliced
- Bell Pepper (any color) - 1 medium, cut into strips
- Red Onion - 1 small, sliced into rings
- Cherry Tomatoes - 200 grams, halved
- Olive Oil - 2 tablespoons
- Dried Oregano - 1 teaspoon
- Salt - ½ teaspoon
- Black Pepper - ¼ teaspoon
- Fresh Parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat your grill or grill pan over medium-high heat.
- In a large bowl, combine the sliced zucchini, bell pepper strips, red onion rings, and halved cherry tomatoes.
- Drizzle the olive oil over the vegetables, then sprinkle with dried oregano, salt, and black pepper. Toss well to coat all the vegetables evenly.
- Place the vegetables on the preheated grill in a single layer. Grill for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
