- Zucchini - 100 grams
- Red bell pepper - 100 grams
- Eggplant - 100 grams
- Red onion - 50 grams
- Garlic - 2 cloves
- Chickpeas - 200 grams (cooked and drained)
- Fresh parsley - 30 grams
- Oregano - 1 teaspoon
- Cumin - 1 teaspoon
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole wheat burger buns - 2
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Cucumber - 50 grams (sliced)
- Tomato - 50 grams (sliced)
Steps
- Preheat the grill or grill pan over medium heat.
- Slice the zucchini, red bell pepper, eggplant, and red onion into even thickness.
- In a bowl, toss the sliced vegetables with 1 tablespoon of olive oil, minced garlic, salt, and black pepper.
- Grill the vegetables for about 5-7 minutes on each side until they are tender and have nice grill marks.
- In a food processor, combine the cooked chickpeas, parsley, oregano, cumin, remaining olive oil, and a pinch of salt. Pulse until you achieve a coarse mixture.
- Form the chickpea mixture into two patties, pressing firmly to hold them together.
- On the grill, cook the patties for 4-5 minutes on each side, until they are golden brown and heated through.
- To assemble the burgers, spread tahini and lemon juice on the bottom half of each bun.
- Layer the grilled vegetables, sliced cucumber, and tomato on top of the tahini spread.
- Top with the chickpea patties and cover with the bun tops. Serve immediately.
