Ingredients

  • Zucchini - 100 grams
  • Red bell pepper - 100 grams
  • Eggplant - 100 grams
  • Red onion - 50 grams
  • Garlic - 2 cloves
  • Chickpeas - 200 grams (cooked and drained)
  • Fresh parsley - 30 grams
  • Oregano - 1 teaspoon
  • Cumin - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat burger buns - 2
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Cucumber - 50 grams (sliced)
  • Tomato - 50 grams (sliced)

Steps

  1. Preheat the grill or grill pan over medium heat.
  2. Slice the zucchini, red bell pepper, eggplant, and red onion into even thickness.
  3. In a bowl, toss the sliced vegetables with 1 tablespoon of olive oil, minced garlic, salt, and black pepper.
  4. Grill the vegetables for about 5-7 minutes on each side until they are tender and have nice grill marks.
  5. In a food processor, combine the cooked chickpeas, parsley, oregano, cumin, remaining olive oil, and a pinch of salt. Pulse until you achieve a coarse mixture.
  6. Form the chickpea mixture into two patties, pressing firmly to hold them together.
  7. On the grill, cook the patties for 4-5 minutes on each side, until they are golden brown and heated through.
  8. To assemble the burgers, spread tahini and lemon juice on the bottom half of each bun.
  9. Layer the grilled vegetables, sliced cucumber, and tomato on top of the tahini spread.
  10. Top with the chickpea patties and cover with the bun tops. Serve immediately.
