- Sea Bass - 2 fillets (approximately 200g each)
- Olive Oil - 3 tablespoons
- Lemon Juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh Oregano - 1 tablespoon, chopped
- Fresh Parsley - 1 tablespoon, chopped
- Salt - 1 teaspoon
- Black Pepper - 1/2 teaspoon
- Cherry Tomatoes - 200g, halved
- Capers - 1 tablespoon, rinsed
- Lemon Wedges - for serving
Steps
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, chopped oregano, chopped parsley, salt, and black pepper to create a marinade.
- Place the sea bass fillets in a shallow dish and pour the marinade over them, ensuring they are well coated. Allow to marinate for at least 15 minutes.
- Preheat the grill to medium-high heat.
- Once the grill is hot, place the marinated sea bass fillets skin-side down on the grill. Grill for 5-6 minutes without moving them.
- Gently flip the fillets using a spatula and grill for another 4-5 minutes, or until the fish is cooked through and flakes easily with a fork.
- Meanwhile, toss the halved cherry tomatoes and rinsed capers in a bowl with a drizzle of olive oil, salt, and pepper.
- Remove the sea bass from the grill and let it rest for a couple of minutes.
- Serve the grilled sea bass topped with the cherry tomato and caper mixture, and garnish with lemon wedges.
