Ingredients

  • Portobello mushrooms - 4 large mushrooms
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh oregano - 1 tablespoon, chopped (or 1 teaspoon dried)
  • Fresh thyme - 1 tablespoon, chopped (or 1 teaspoon dried)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Balsamic vinegar - 1 tablespoon
  • Cherry tomatoes - 200 grams, halved
  • Red onion - 1 medium, sliced
  • Fresh parsley - for garnish

Steps

  1. Preheat your grill or grill pan over medium heat.
  2. Rinse the portobello mushrooms under cold water and pat them dry with a towel.
  3. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, black pepper, and balsamic vinegar to create the marinade.
  4. Place the portobello mushrooms in the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
  5. While the mushrooms are marinating, prepare the cherry tomatoes and red onion by tossing them with a little olive oil, salt, and pepper.
  6. Once the grill is hot, place the marinated portobello mushrooms on it, gill side down. Grill for about 5-7 minutes.
  7. Flip the mushrooms and add the cherry tomatoes and red onion to the grill. Grill for another 5-7 minutes until the mushrooms are tender and the veggies are slightly charred.
  8. Remove from the grill and let the mushrooms rest for a couple of minutes.
  9. Serve the grilled portobello mushrooms topped with the grilled cherry tomatoes and red onion, and garnish with fresh parsley.
