Ingredients
- Portobello mushrooms - 4 large mushrooms
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh oregano - 1 tablespoon, chopped (or 1 teaspoon dried)
- Fresh thyme - 1 tablespoon, chopped (or 1 teaspoon dried)
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Balsamic vinegar - 1 tablespoon
- Cherry tomatoes - 200 grams, halved
- Red onion - 1 medium, sliced
- Fresh parsley - for garnish
Steps
- Preheat your grill or grill pan over medium heat.
- Rinse the portobello mushrooms under cold water and pat them dry with a towel.
- In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, black pepper, and balsamic vinegar to create the marinade.
- Place the portobello mushrooms in the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
- While the mushrooms are marinating, prepare the cherry tomatoes and red onion by tossing them with a little olive oil, salt, and pepper.
- Once the grill is hot, place the marinated portobello mushrooms on it, gill side down. Grill for about 5-7 minutes.
- Flip the mushrooms and add the cherry tomatoes and red onion to the grill. Grill for another 5-7 minutes until the mushrooms are tender and the veggies are slightly charred.
- Remove from the grill and let the mushrooms rest for a couple of minutes.
- Serve the grilled portobello mushrooms topped with the grilled cherry tomatoes and red onion, and garnish with fresh parsley.
