Ingredients

  • Halloumi cheese - 200 grams
  • Bell pepper (red or yellow) - 1 medium, cut into 1-inch pieces
  • Zucchini - 1 medium, sliced into 1/2-inch rounds
  • Cherry tomatoes - 150 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Skewers - 4 (if wooden, soaked in water for 30 minutes)

Steps

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine olive oil, lemon juice, dried oregano, garlic powder, salt, and black pepper to create the marinade.
  3. Cut the halloumi cheese into 1-inch cubes and add them to the marinade, ensuring they are well-coated. Let marinate for 10 minutes.
  4. While the halloumi is marinating, prepare the vegetables by cutting the bell pepper into 1-inch pieces, slicing the zucchini, and washing the cherry tomatoes.
  5. Thread the marinated halloumi, bell pepper, zucchini, and cherry tomatoes onto the skewers, alternating between each ingredient.
  6. Place the skewers on the preheated grill and cook for about 8-10 minutes, turning occasionally until the halloumi is golden brown and the vegetables are tender.
  7. Remove from the grill and let cool for a minute before serving.
